Instructions

  1. In a large mixing bowl, combine 2 cups of cooked white rice, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Mix well to coat the rice evenly.
  2. Wet your hands slightly to prevent sticking, then form the rice mixture into small, compact patties—about 2 inches in diameter and ½ inch thick.
  3. Add 2 tablespoons of vegetable oil to your non-stick skillet and heat over medium-high heat until shimmering.
  4. Carefully place the rice cakes into the skillet in a single layer. Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  5. In a small bowl, mix ½ cup mayonnaise, 2 tablespoons Sriracha, and 1 tablespoon rice vinegar. Taste and adjust seasoning as desired.
  6. Sprinkle the crispy rice cakes with sesame seeds and sliced green onions before serving.
  7. Arrange the rice cakes on a platter and serve with the spicy mayo on the side for dipping.
