  • 1 pound fresh asparagus spears, trimmed
  • 68 thin slices prosciutto
  • 1 tablespoon extra-virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional)
  • Lemon zest from 1 lemon (optional)
  • Optional: grated Parmesan or red pepper flakes for extra flavor

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Trim the asparagus by snapping off the woody ends (about 1–2 inches).
  3. Group 3–4 asparagus spears into small bundles, making about 6–8 bundles.
  4. Wrap each bundle tightly but gently with a strip of prosciutto, tearing slices in half lengthwise if wide.
  5. Place the bundles in a mixing bowl, drizzle with olive oil, and sprinkle with black pepper. Toss gently to coat.
  6. Arrange the bundles seam side down on the baking sheet.
  7. Bake for 12–15 minutes until prosciutto is crisp and asparagus is tender but still has a snap. Rotate pan halfway if needed.
  8. Remove from oven and optionally zest lemon over the bundles. Serve warm or at room temperature.

Notes

Use uniform asparagus spears for even cooking. Wrap prosciutto snugly but not too tight. Watch oven timing closely to avoid burning. Convection oven crisps prosciutto faster. For reheating, use oven or air fryer to keep crispiness. Variations include adding cheese, spices, or using smoked eggplant for a vegetarian option.
