  • 1 pound (450 grams) asparagus spears, trimmed
  • 6 to 8 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • ½ teaspoon garlic powder (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Lemon zest from half a lemon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top.
  2. Trim the asparagus by bending each spear near the base until it snaps naturally to remove tough ends.
  3. Toss asparagus with olive oil, garlic powder, and black pepper in a mixing bowl until evenly coated.
  4. Gather asparagus into bundles of 3-4 spears depending on thickness.
  5. Cut prosciutto slices in half lengthwise; each half will wrap one bundle. Double-wrap if slices are very thin.
  6. Wrap each asparagus bundle tightly with a prosciutto strip, starting near the bottom and spiraling upwards, tucking the end underneath.
  7. Place the wrapped bundles seam side down on the wire rack.
  8. Sprinkle Parmesan cheese and lemon zest over bundles if using.
  9. Bake for 15-18 minutes until prosciutto is crisp and slightly browned and asparagus is tender but still crisp. Check at 12 minutes to avoid burning.
  10. Remove from oven and let cool for 3-5 minutes before serving.

Notes

Use a wire rack to ensure prosciutto crisps evenly without sogginess. Avoid overcrowding bundles on the rack. Start checking at 12 minutes to prevent burning. Let bundles rest after baking to firm up the prosciutto. For dairy-free, omit Parmesan or use a vegan alternative. Thicker asparagus stalks hold together better when wrapped.
