These crispy Philly cheesesteak egg rolls feature tender strips of beef, sweet sautéed peppers, and melty provolone cheese wrapped in a crunchy egg roll shell. Perfect for a quick, satisfying meal or party snack.

  • 8 oz ribeye steak or sirloin, thinly sliced
  • 1 cup bell peppers (red and green), thinly sliced
  • ½ medium yellow onion, thinly sliced
  • 4 slices provolone cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 tsp Worcestershire sauce (optional)
  • 8 egg roll wrappers
  • Water, for sealing wrappers
  • About 4 cups vegetable oil (or peanut or canola oil) for frying

Instructions

  1. Pat the steak dry and slice thinly against the grain (about ¼ inch thick). Set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add sliced onions and bell peppers and sauté until softened and lightly caramelized, about 7-8 minutes. Add minced garlic during the last minute. Season with salt and pepper. Transfer vegetables to a bowl.
  3. Add remaining olive oil to skillet and increase heat to medium-high. Add steak slices in a single layer and sear about 2 minutes per side until browned but still juicy. Season with salt, pepper, and Worcestershire sauce. Remove from heat.
  4. Combine steak with sautéed peppers and onions in the bowl. Let cool slightly.
  5. Lay one egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 3 tablespoons of filling near the corner closest to you. Top with a slice of provolone cheese. Fold the corner over the filling, fold in the sides, and roll tightly toward the far corner. Dab water on the final corner to seal. Repeat with remaining wrappers.
  6. Pour vegetable oil into a deep pan to a depth of about 2 inches. Heat to 350°F (175°C).
  7. Fry 2-3 egg rolls at a time until golden brown and crispy, about 3-4 minutes, turning occasionally. Remove with tongs and drain on paper towels or wire rack.
  8. Let cool for a minute or two before serving.

Notes

Use thinly sliced steak for tenderness and quick cooking. Do not overfill wrappers to avoid tearing. Seal wrappers well with water to prevent oil seepage. Maintain oil temperature at 350°F for best crispiness. Fry in batches to avoid lowering oil temperature. Let filling cool slightly before assembling to prevent soggy wrappers. Baking option: brush with oil and bake at 425°F for 15-20 minutes, flipping halfway.
