  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup cream cheese, softened
  • Salt and pepper to taste
  • 2 green onions, thinly sliced (optional)
  • ½ cup cooked bacon bits or vegetarian bacon (optional)
  • Fresh chopped parsley or cilantro (optional)
  • Sour cream or Greek yogurt for serving (optional)

Instructions

  1. Wash and dry the russet potatoes thoroughly. Slice into 1/8-inch (about 3 mm) thin rounds using a mandoline or sharp knife.
  2. Place potato slices in a bowl of cold water and swish gently to remove excess starch. Drain and pat dry with kitchen towels.
  3. In a large bowl, toss potato slices with olive oil, salt, black pepper, garlic powder, and smoked paprika until lightly coated.
  4. Heat a large non-stick skillet over medium heat. Add a single layer of potato slices and cook for 3-4 minutes per side until golden and crisp. Remove and drain on paper towels. Repeat in batches.
  5. In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux.
  6. Slowly whisk in milk, stirring constantly until sauce thickens (about 4-5 minutes). Lower heat and stir in shredded cheddar and cream cheese until smooth. Season with salt and pepper.
  7. Return half the crispy potatoes to the skillet or an oven-safe dish. Pour half the cheese sauce over them. Layer remaining potatoes and top with remaining cheese sauce.
  8. Optional: Place under a preheated broiler for 2-3 minutes for bubbly cheese, watching closely to avoid burning.
  9. Sprinkle green onions, bacon bits, and fresh herbs on top. Serve immediately with sour cream or Greek yogurt.

For best crispiness, slice potatoes thin and dry thoroughly. Fry in batches to avoid steaming. Cheese sauce should be cooked low and slow to avoid lumps.
