  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/3 cup Parmesan cheese, grated (optional)
  • Olive oil for brushing or spraying
  • Optional seasonings: garlic powder, paprika, or fresh herbs like parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mashed potatoes, flour, beaten egg, salt, pepper, and Parmesan cheese (if using). Mix until smooth and well-combined.
  3. Lightly flour your hands and roll the mixture into a thick rectangle. Cut into fry-sized strips (about 1/2-inch thick).
  4. Place the strips on the prepared baking sheet, leaving space between each piece.
  5. Use a pastry brush to lightly coat each fry with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through. The fries are ready when they’re golden brown and crispy on the outside.
  7. Let them sit for a couple of minutes before serving—they’re best enjoyed warm.

Notes

For extra crispiness, flip the fries halfway through baking. Adjust seasonings to taste and experiment with flavors like smoked paprika or fresh herbs.
