A quick and easy snack featuring crispy baked tater tots loaded with seasoned ground beef, melted cheese, and fresh vibrant toppings. Perfect for game days, family gatherings, or casual hangouts.

  • 32 oz (900 g) frozen tater tots
  • 1 lb (450 g) ground beef, lean or regular, browned and drained
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 2 cups (200 g) shredded sharp cheddar or Mexican blend cheese
  • 1 cup (240 ml) black beans, rinsed and drained (optional)
  • 2 jalapeños, sliced thin (fresh or pickled)
  • 1 cup (150 g) ripe tomatoes, diced
  • 3 green onions, sliced thin
  • ¼ cup fresh cilantro, chopped (optional)
  • ½ cup (120 ml) sour cream
  • 1 ripe avocado, diced or ½ cup guacamole
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Spread the frozen tater tots evenly on the baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  3. While the tots bake, brown the ground beef in a skillet over medium-high heat for 6-8 minutes, breaking it up as it cooks.
  4. Drain excess fat and stir in taco seasoning with ¼ cup (60 ml) water. Simmer for 2-3 minutes until thickened and fragrant.
  5. Remove tater tots from oven and reduce oven temperature to 375°F (190°C).
  6. Layer the tater tots on an oven-safe platter or back on the baking sheet. Sprinkle seasoned ground beef evenly over the tots.
  7. Add black beans evenly over the beef, then cover everything with shredded cheese.
  8. Return to oven and bake for 5-7 minutes until cheese is melted, bubbling, and golden in spots.
  9. Remove from oven and immediately top with fresh jalapeños, diced tomatoes, green onions, and cilantro.
  10. Dollop sour cream and avocado or guacamole on top.
  11. Serve with lime wedges on the side, squeezing fresh lime juice over the top before eating.
