  • 1 cup sour cream

  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 3 cups plain cornflake cereal, crushed
  • 4 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice or cube the chicken breasts and season with salt, pepper, onion powder, and garlic powder. Set aside.
  3. In a large bowl, combine the condensed cream of chicken soup, sour cream, and shredded cheddar cheese. Stir until smooth.
  4. Fold in the shredded potatoes and seasoned chicken pieces, ensuring the chicken is evenly coated.
  5. Pour the mixture into a 9×13-inch casserole dish, spreading evenly. Add a splash of milk or chicken broth if too dry.
  6. Crush the cornflakes in a bowl, drizzle melted butter over them, and toss until evenly coated.
  7. Sprinkle the buttery cornflake mixture evenly over the casserole.
  8. Bake uncovered for 45-50 minutes until the chicken is fully cooked (internal temp 165°F) and the topping is golden brown. Tent with foil if topping browns too quickly.
  9. Let the casserole rest for 5-10 minutes before serving.

For gluten-free, substitute condensed soup with homemade gluten-free white sauce and use gluten-free cornflakes. Marinate chicken in lemon juice and olive oil for extra juiciness. Avoid over-mixing potatoes to maintain texture. Reheat leftovers in the oven to keep topping crunchy.
