  • 2 1/4 teaspoons active dry yeast (one packet)
  • 1 cup (240ml) warm water, about 110°F (43°C)
  • 1 tablespoon granulated sugar

  • 1 tablespoon poppy seeds
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried minced onion
  • 1 teaspoon coarse sea salt
  • 8 ounces (225g) cream cheese, softened
  • 1/4 cup (60ml) sour cream
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast by combining warm water, sugar, and active dry yeast in a large mixing bowl. Stir gently and let sit for 5-7 minutes until foamy.
  2. Add sifted all-purpose flour, salt, and olive oil to the yeast mixture. Mix with a wooden spoon or dough hook until a shaggy dough forms.
  3. Transfer dough to a floured surface and knead for 8-10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for 6-7 minutes.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Punch down the dough gently and divide into 15 equal pieces (about 1.5 ounces or 45g each). Roll each piece into a smooth ball.
  6. Brush an 8-inch round baking pan or cast-iron skillet with olive oil. Layer the dough balls snugly in the pan, stacking them in rows.
  7. Mix poppy seeds, toasted sesame seeds, dried garlic, dried onion, and coarse sea salt in a small bowl. Brush dough balls generously with olive oil, then sprinkle seasoning evenly on top.
  8. Cover the pan loosely and let the dough rise for 30-40 minutes until puffy but not doubled.
  9. Preheat oven to 375°F (190°C). Bake the bread for 25-30 minutes until the crust is golden brown and crispy. The bread should sound hollow when tapped.
  10. While baking, combine softened cream cheese, sour cream, chopped chives, garlic powder, lemon juice, salt, and pepper in a bowl. Whip until smooth and creamy. Chill until serving.
  11. Let the bread cool for 10 minutes before serving with the cream cheese dip on the side. Tear apart and enjoy.

Always proof yeast first to ensure it’s active. Brush dough with olive oil before seasoning to help topping stick. Watch oven after 20 minutes to avoid burning; tent with foil if needed.
