This crispy dill cucumber onion salad is the perfect summer side dish—crunchy, tangy, and incredibly easy to make. It’s a crowd-pleaser that pairs beautifully with grilled meats and is always the first bowl to empty at parties.

Ingredients

Scale
  • 2 large English cucumbers
  • 1 medium red onion
  • 1/4 cup fresh dill, chopped
  • 1/2 cup white vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, minced (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons sour cream (optional)

Instructions

  1. Wash and slice the cucumbers into thin rounds, about 1/8-inch thick.
  2. Peel and slice the red onion into thin half-rings.
  3. Place the sliced cucumbers in a colander, sprinkle with 1 teaspoon salt, and let sit for 10 minutes to draw out excess moisture.
  4. Rinse the cucumbers under cold water and pat dry with paper towels.
  5. In a small bowl, whisk together white vinegar, sugar, water, black pepper, and any optional add-ins until sugar is dissolved.
  6. In a large mixing bowl, combine cucumbers, red onion, and fresh dill. Pour dressing over and toss to coat.
  7. Cover and let marinate at room temperature for 15-30 minutes (or up to 2 hours).
  8. Taste and adjust seasonings if needed.
  9. Serve cold or at room temperature, garnished with extra dill if desired.

Notes

Salting the cucumbers is crucial for crunch. Use fresh dill for best flavor. Letting the salad marinate for 30 minutes to 1 hour enhances flavor. Store leftovers in the fridge for up to 3 days, but texture will soften.
