  • 2 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil (or melted butter for richness)
  • 1 cup all-purpose flour (120 g)
  • Vegetable oil, for frying (enough for a deep fryer or a heavy-bottomed pot)
  • 1/2 cup granulated sugar (100 g)
  • 1 teaspoon ground cinnamon
  • 4 oz bittersweet chocolate, chopped (115 g)
  • 1/2 cup heavy cream (120 ml)
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, combine 1 cup (240 ml) water, 2 1/2 tablespoons sugar, 1/2 teaspoon salt, and 2 tablespoons vegetable oil. Bring to a boil over medium heat, stirring occasionally. Once boiling, remove from heat immediately.
  2. Quickly stir in 1 cup (120 g) all-purpose flour all at once using a wooden spoon. Stir vigorously until the mixture forms a ball and pulls away from the side of the pan, about 1-2 minutes. Let it cool for 5 minutes.
  3. Fill a deep fryer or deep pot with about 2 inches (5 cm) of vegetable oil and heat it to 375°F (190°C). Prepare a piping bag fitted with a large star tip and load the dough into it.
  4. Pipe 4-6 inch (10-15 cm) lengths of dough directly into the hot oil. Use scissors to cut the dough as you pipe. Fry a few at a time to avoid overcrowding, about 2-3 minutes per side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  5. While still warm, toss churros in a bowl of 1/2 cup sugar mixed with 1 teaspoon cinnamon until evenly coated.
  6. In a small saucepan, heat 1/2 cup (120 ml) heavy cream over low heat until it just begins to simmer. Remove from heat and add 4 oz (115 g) chopped bittersweet chocolate, 1 tablespoon butter, and 1 teaspoon vanilla extract. Stir gently until smooth and glossy.
  7. Arrange churros on a plate with a small bowl of warm chocolate sauce for dipping. Serve fresh and hot.

Notes

Keep oil temperature steady at 375°F (190°C) to avoid greasy or burnt churros. If dough is too thick to pipe, let it rest a few more minutes. For a gluten-free version, substitute almond flour and use dairy-free chocolate and cream alternatives for the sauce. Baking option: bake at 425°F (220°C) for 15-20 minutes for a lighter churro.
