  • 2 large eggs, lightly beaten
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish, red pepper flakes for heat

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil or non-stick cooking spray.
  2. Pound chicken breasts to an even thickness and season both sides with salt, pepper, and garlic powder.
  3. Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for a mixture of Panko breadcrumbs, Parmesan cheese, and Italian seasoning.
  4. Dredge each chicken breast in flour, shaking off excess, then dip into the egg wash, and coat thoroughly with the breadcrumb mixture. Press lightly to ensure an even coating.
  5. Place the coated chicken breasts in the prepared baking dish and drizzle lightly with olive oil.
  6. Sprinkle shredded mozzarella cheese generously on top of each chicken breast.
  7. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden.
