  • 2 large heads romaine lettuce, washed and torn into bite-sized pieces
  • ½ cup freshly grated Parmesan cheese (Parmigiano-Reggiano preferred)
  • 1 tablespoon fresh lemon juice
  • 4 cups cubed day-old baguette or sourdough bread (about 6 oz or 170 g)
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • Pinch of salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, toss the cubed bread with melted butter, minced garlic, chopped parsley, salt, and pepper until evenly coated.
  3. Spread the bread cubes on a baking sheet in a single layer and bake for 10-15 minutes or until golden and crispy, stirring halfway through.
  4. In a large salad bowl, combine torn romaine lettuce, grated Parmesan cheese, and fresh lemon juice.
  5. Add the homemade croutons to the salad and toss gently to combine.
  6. Season with additional salt and pepper if needed and serve immediately.

Notes

Use day-old bread for the best croutons. Fresh garlic and parsley add a punch of flavor. Serve immediately to maintain crispness.
