  • 4 slices banana bread (preferably slightly stale)
  • 3 large eggs, room temperature
  • 1 cup (240 ml) whole milk or milk of choice (almond or oat milk works too)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • 1/2 cup (120 ml) heavy cream or whipping cream
  • 3 tablespoons pure maple syrup
  • 1 teaspoon powdered sugar (optional)
  • Butter or neutral oil for frying (unsalted butter recommended)

Instructions

  1. In a medium bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and salt until fully blended and slightly frothy (about 2-3 minutes).
  2. Remove crusts from sandwich bread slices and gently flatten each slice using a rolling pin or hands to make them pliable.
  3. Place a slice of banana bread at one edge of each flattened sandwich bread slice.
  4. Carefully roll the sandwich bread around the banana bread slice, tucking in edges slightly to seal. Use softened butter to glue edges if needed.
  5. Heat a skillet over medium heat and add a tablespoon of butter, swirling to coat.
  6. Dip each roll into the egg custard, coating all sides and letting excess drip off.
  7. Place rolls seam side down in the skillet and cook for 3-4 minutes per side until golden brown and crispy, turning gently.
  8. While rolls cook, whip heavy cream with maple syrup and powdered sugar in a chilled bowl until soft peaks form (3-4 minutes).
  9. Serve the French toast rolls warm, drizzled with maple cream and optionally sprinkled with powdered sugar or fresh banana slices.

Notes

Remove crusts from bread to prevent tearing and make rolling easier. Flatten bread gently to avoid breakage. Use medium heat to get crispy exterior without sogginess. Maple cream can be made ahead and kept chilled. For gluten-free or vegan versions, substitute breads and dairy accordingly.
