  • 8 slices thick-cut applewood smoked bacon
  • 4 large eggs (room temperature)

  • ½ cup mayonnaise (full-fat recommended)
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 1 tsp fresh lime juice
  • ½ tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Make the chipotle mayo: In a small bowl, combine ½ cup mayonnaise, finely chopped chipotle peppers in adobo (start with one, add more to taste), 1 tsp fresh lime juice, and ½ tsp smoked paprika. Whisk well and season with salt and pepper. Refrigerate for at least 10 minutes to let flavors meld.
  2. Cook the bacon: Heat a non-stick skillet over medium heat. Lay out 8 slices of thick-cut bacon and cook until crispy and browned, about 6-8 minutes, flipping halfway. Transfer to a paper towel-lined plate to drain excess fat.
  3. Prepare the bagels: Slice bagels in half horizontally. Butter each cut side lightly. Toast in a toaster oven or under a broiler until golden and crisp, about 2-3 minutes. Watch closely to avoid burning.
  4. Fry the eggs: Using the same skillet (remove excess bacon fat if too much), reduce heat to medium-low. Crack in one egg at a time. Cook until whites are set but yolks remain slightly runny, about 3-4 minutes. For less runny yolks, flip carefully and cook an extra minute. Season with salt and pepper.
  5. Assemble the sandwiches: Spread a generous layer of chipotle mayo on the bottom half of each toasted bagel. Add two slices of crispy bacon, then the fried egg, and top with a slice of cheddar cheese. Close the sandwich with the bagel top.
  6. Optional: Pop the assembled sandwich back into the toaster oven for 1-2 minutes to gently melt the cheese if desired.
  7. Serve immediately while the bagel is warm and the bacon stays crispy.
