  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1/2 cup freshly grated Parmesan cheese (optional)
  • 2 medium potatoes, diced into bite-sized pieces
  • Salt and pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Heat a large pot or Dutch oven over medium heat and add the Italian sausage. Cook until browned, breaking it up into small pieces with a wooden spoon as it cooks (about 5-7 minutes).
  2. Remove the sausage from the pot and set it aside. Drain excess grease, leaving about 1 tablespoon in the pot.
  3. Add the chopped onion to the pot and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute, until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Add the diced potatoes and cook for about 10-12 minutes, or until they’re tender.
  5. Reduce the heat to low and stir in the heavy cream. Let it simmer gently for 5 minutes to meld the flavors.
  6. Return the cooked sausage to the pot and stir well. Add the fresh spinach, stirring until it wilts (about 2-3 minutes).
  7. Season the soup with salt, pepper, and crushed red pepper flakes to taste.
  8. Serve hot, topped with freshly grated Parmesan cheese if desired.

Notes

For a vegetarian version, swap the sausage for plant-based sausage or mushrooms and use vegetable broth. Add a squeeze of fresh lemon juice before serving for a bright finish.
