  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup (240ml) heavy cream (or half-and-half for lighter version)
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 1/2 cup (120ml) low sodium chicken broth
  • 2 cups fresh spinach (optional)
  • 8 ounces (225g) fettuccine or linguine pasta (gluten-free if needed)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, a handful chopped (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) of fettuccine or linguine and cook according to package instructions (usually 10-12 minutes) until al dente. Reserve 1/2 cup (120ml) pasta water, then drain and set aside.
  2. While pasta cooks, heat 1 tablespoon (15ml) olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then add to the pan. Cook for about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. Add the remaining 1 tablespoon (15ml) olive oil. Toss in minced garlic and sauté for 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in chicken broth and scrape the browned bits from the bottom of the pan. Let it simmer for 2 minutes. Stir in heavy cream, Parmesan cheese, and red pepper flakes if using. Stir frequently until sauce thickens slightly, about 3-5 minutes. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  5. Add fresh spinach and cooked shrimp. Stir gently until spinach wilts and shrimp are heated through, about 2 minutes.
  6. Add drained pasta to the skillet and toss everything together to coat well in the sauce. Taste and adjust seasoning with salt and pepper.
  7. Remove from heat and sprinkle with chopped fresh basil. Serve immediately with extra Parmesan on the side.

Notes

Watch shrimp carefully to avoid overcooking and rubbery texture. Use reserved pasta water to adjust sauce consistency. Fresh basil garnish adds aromatic freshness. For dairy-free, substitute coconut cream and nutritional yeast. Soak dry sun-dried tomatoes if oil-packed are unavailable.
