  • 2 large boneless, skinless chicken breasts (about 1 lb)
  • 10 oz refrigerated or frozen cheese tortellini
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 3 cups fresh baby spinach, roughly chopped
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 tablespoon Italian seasoning
  • Salt (about 1 teaspoon, to taste)
  • Black pepper (about 1/2 teaspoon, to taste)
  • 1/2 cup freshly grated parmesan cheese (plus more for serving)
  • 2 tablespoons olive oil

Instructions

  1. Pat chicken breasts dry and season both sides with salt and black pepper.
  2. Optional: Heat olive oil in a medium skillet over medium heat. Sauté diced onion for 3-4 minutes until soft, then add minced garlic and cook for 1 minute until fragrant.
  3. Place seasoned chicken breasts in the bottom of a 6-quart crockpot. Top with sautéed onion and garlic, chopped sun-dried tomatoes, and Italian seasoning. Pour in chicken broth.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until chicken is tender and cooked through.
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the crockpot.
  6. Stir in cheese tortellini and chopped spinach. Cover and cook on HIGH for 15-20 minutes, or until tortellini are soft and floating. (Add 5-10 extra minutes if using frozen tortellini.)
  7. Reduce heat to LOW. Stir in heavy cream and grated parmesan cheese. Mix gently until combined and creamy. Taste and adjust seasoning as needed.
  8. Ladle soup into bowls and garnish with extra parmesan, cracked black pepper, and a drizzle of olive oil if desired. Serve with crusty bread.

Notes

For best flavor, sauté the onions and garlic before adding to the crockpot. Add tortellini only at the end to prevent overcooking. Adjust soup thickness with extra broth or cream as needed. For a lighter version, use half-and-half instead of cream. To make ahead, add tortellini and spinach when reheating. Soup can be made vegetarian by omitting chicken and using vegetable broth.
