creamy tagliatelle recipe - featured image

A luxurious yet simple dish featuring creamy tagliatelle, crispy bacon, and earthy truffle oil, perfect for comfort food or special occasions.

Ingredients

Scale
  • 9 oz tagliatelle (fresh or dried)
  • 5 oz smoked bacon, diced
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp truffle oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions (around 8-10 minutes for dried pasta). Reserve 1/2 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Add diced bacon and cook until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and set aside.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Lower the heat and pour in the heavy cream. Stir gently and let it simmer for 3-4 minutes until slightly thickened.
  5. Mix in grated Parmesan cheese, allowing it to melt completely into the sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  6. Stir in cooked tagliatelle, ensuring each strand is well-coated with the creamy sauce.
  7. Drizzle truffle oil over the pasta and gently toss to combine. Taste and adjust with salt and black pepper as needed.
  8. Plate the pasta and top with crispy bacon pieces. Garnish with fresh parsley for a pop of color.
  9. Serve immediately and enjoy.

Notes

[‘Don’t overcook the pasta; aim for al dente.’, ‘Use fresh Parmesan for a smoother sauce.’, ‘Cook bacon in batches if needed to ensure crispiness.’, ‘Reserve pasta water to create a glossy sauce.’, ‘Add truffle oil at the end to preserve its flavor.’]
