Instructions

  1. Prepare the ingredients: Thoroughly rinse the leeks to remove dirt and grit. Slice them thinly. Peel and dice the potatoes into small cubes.
  2. Sauté the leeks: Heat 2 tablespoons of butter in your soup pot over medium heat. Add the sliced leeks and cook, stirring occasionally, until they become soft and fragrant, about 5-7 minutes.
  3. Add the potatoes and broth: Stir the diced potatoes into the pot, then pour in 4 cups of chicken or vegetable broth. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cook for 20-25 minutes, or until the potatoes are tender.
