Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until evenly coated and press firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the fridge for about 10 minutes.
  2. Make the filling: Beat softened cream cheese until smooth. Slowly add sweetened condensed milk, mixing continuously. Add fresh key lime juice and lime zest, mixing until slightly thickened. Chill if too runny.
  3. Assemble the pie: Pour filling into chilled crust, spread evenly, cover loosely with plastic wrap, and refrigerate for at least 3 hours or overnight.
  4. Prepare the topping: Whip cold heavy cream with powdered sugar until soft peaks form. Spread or pipe over the set pie and garnish with extra lime zest or lime slices.
