Instructions

  1. Clean and slice the mushrooms about 1/4 inch thick, wiping with a damp cloth to remove dirt.
  2. Heat butter in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  4. Add sliced mushrooms and cook low and slow for about 15 minutes, allowing them to brown and most liquid to evaporate.
  5. Sprinkle flour evenly over the mushroom mixture and stir constantly for 2-3 minutes to cook off raw flour taste.
  6. Slowly pour in broth while whisking to avoid lumps. Add white wine if using. Bring to a gentle simmer and cook for 8-10 minutes until gravy thickens.
  7. Stir in heavy cream and thyme. Simmer for 2 more minutes to meld flavors.
  8. Season with salt and freshly ground black pepper to taste.
  9. Optional: Strain gravy through a fine mesh sieve for a smoother texture.
  10. Serve warm over mashed potatoes, roasted vegetables, or your favorite comfort dishes.
