Creamy Lemon Risotto Recipe with Perfect Lemon Pepper Shrimp

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth, warm
  • 1 tablespoon olive oil or butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1/3 cup freshly grated Parmesan cheese
  • Juice and zest of 1 large lemon
  • Salt and pepper to taste
  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon paprika
  • Salt to taste
  • Juice of half a lemon

Instructions

  1. Pat the shrimp dry with paper towels and toss them in a bowl with olive oil, lemon pepper seasoning, paprika, and a pinch of salt. Mix until evenly coated and set aside to marinate.
  2. Heat the broth in a saucepan over low heat and keep it warm.
  3. In a large sauté pan, heat olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 3 minutes.
  4. Stir in the garlic and cook for 1 minute until fragrant.
  5. Add the Arborio rice to the pan and cook for 2 minutes, stirring constantly, until the rice is lightly toasted.
  6. Pour in the white wine (if using), stirring until it’s mostly absorbed.
  7. Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding the next ladle. This process will take about 20 minutes.
  8. When the rice is creamy and tender, stir in the lemon juice, zest, and Parmesan cheese. Season with salt and pepper to taste.
  9. Heat a medium skillet over medium-high heat. Add the marinated shrimp in a single layer.
  10. Cook for 2-3 minutes per side until the shrimp are pink and opaque.
  11. Squeeze the juice of half a lemon over the shrimp and toss to coat.
  12. Spoon the creamy risotto onto plates or bowls.
  13. Top with the lemon pepper shrimp and garnish with extra lemon zest or parsley if desired.
