A comforting, keto-friendly casserole packed with creamy ranch, smoky bacon, tender chicken, and cheesy goodness. Perfect for busy weeknights or family dinners.

  • 4 cups cooked chicken, shredded or cubed
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 cloves minced garlic
  • 2 cups steamed and chopped broccoli (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the bacon until crispy. Remove and crumble into small pieces.
  3. In a large mixing bowl, combine softened cream cheese, heavy cream, ranch seasoning, minced garlic, and half of the shredded cheddar cheese. Mix until smooth and creamy.
  4. Fold the shredded chicken and steamed broccoli into the creamy mixture, ensuring everything is well-coated.
  5. Spread the mixture evenly into a greased 9×13-inch casserole dish. Top with crumbled bacon and the remaining shredded cheddar cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole sit for 5 minutes before serving to allow the flavors to meld together.

Notes

Use rotisserie chicken for convenience. Steam broccoli to keep it tender. If the cream cheese isn’t smooth, it will melt during baking. Add a splash of heavy cream if the mixture seems too thick before baking.
