  • 1/4 cup (60 ml) honey (or maple syrup for vegan option)
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 to 1.5 cups (150225 g) fresh mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1 tablespoon (15 ml) fresh lemon juice (optional)
  • A few sprigs of mint leaves (optional garnish)

Instructions

  1. In a medium bowl, combine 2 cups (480 ml) of plain Greek yogurt with 1/4 cup (60 ml) honey and 1 teaspoon (5 ml) pure vanilla extract. Use an electric mixer or whisk vigorously by hand until the mixture is smooth and slightly fluffy, about 2-3 minutes.
  2. Rinse 1 to 1.5 cups (150-225 g) of fresh mixed berries under cold water. Gently pat dry and slice larger berries like strawberries. Toss them in a bowl with 1 tablespoon (15 ml) fresh lemon juice to brighten flavors. Set aside for about 5 minutes to macerate.
  3. Pour the yogurt mixture into a shallow, freezer-safe container. Smooth the top with a spatula. Cover tightly with a lid or plastic wrap and place in the freezer for about 2 hours to begin firming up.
  4. After 2 hours, remove the container and stir the frozen yogurt vigorously to break up any ice crystals. Return to freezer.
  5. Freeze for an additional 2-3 hours or until firm but scoopable. Remove from freezer about 10 minutes before serving to soften slightly if desired.
  6. Spoon the creamy frozen yogurt into bowls or cones. Top generously with the fresh berry mixture and garnish with a few mint leaves.

Notes

Whip the yogurt before freezing to trap air and prevent icy texture. Stir the frozen yogurt every couple of hours during freezing to keep it creamy and scoopable. Use full-fat Greek yogurt for best texture. Frozen berries can be used if fresh are unavailable; thaw and drain excess juice first. Let frozen yogurt sit at room temperature for 5-10 minutes before scooping if too hard.
