  1. Peel and slice bananas into ½-inch (1.25 cm) thick rounds. Arrange in a single layer on a parchment-lined baking sheet.
  2. Freeze banana slices for at least 1 hour until firm but not rock solid.
  3. Melt dark chocolate chips and unsalted butter in a microwave-safe bowl in 20-second intervals, stirring until smooth and glossy, or melt over a double boiler on low heat.
  4. Using tongs or a fork, dip each frozen banana slice into the melted chocolate, coating evenly. Let excess chocolate drip off gently.
  5. Immediately sprinkle coated banana bites with colorful sprinkles before the chocolate sets.
