  • 1 medium onion, diced
  • 3 cloves garlic, minced

  • 1 teaspoon oregano

Instructions

  1. Place the chicken breasts or thighs at the bottom of your crockpot.
  2. Add the drained and rinsed white beans, frozen or canned corn, diced onion, and minced garlic on top of the chicken.
  3. Sprinkle the spices evenly over the ingredients—cumin, chili powder, paprika, oregano, salt, and pepper.
  4. Pour the chicken broth over everything, ensuring the chicken is fully submerged.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once the chicken is cooked and tender, use tongs or forks to shred it directly in the pot.
  7. Add the cream cheese to the crockpot and stir until it melts and incorporates into the broth.
  8. Allow the chili to simmer for an additional 15-20 minutes on low heat to thicken slightly.
