A quick and easy spaghetti recipe coated in a luscious cream cheese sauce, perfect for busy weeknights or cozy gatherings.

Ingredients

Scale
  • 12 ounces spaghetti
  • 8 ounces full-fat cream cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup whole milk
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the cream cheese to the skillet, breaking it into smaller chunks with your spoon. Stir continuously until the cream cheese melts and combines with the butter.
  4. Gradually pour in the milk, whisking until the mixture is smooth and creamy. Add the Parmesan cheese and stir until fully melted.
  5. Season the sauce with salt and pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  6. Add the cooked spaghetti to the skillet, tossing gently to coat every strand in the creamy sauce.
  7. Serve immediately, garnished with chopped parsley for a fresh finish.

Notes

[‘Don’t overcook the pasta; al dente spaghetti holds up better when tossed in the sauce.’, ‘Reserve pasta water to thin the sauce and make it cling to the noodles.’, ‘Use fresh Parmesan for a smoother melt.’, ‘Work quickly as the sauce thickens as it cools.’]
