  • 2 pounds Russet potatoes, peeled and diced
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper, to taste
  • 2 green onions, finely chopped for garnish

Instructions

  1. Peel and dice the potatoes, chop the onions and garlic, and gather all your spices and seasonings.
  2. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant (about 3-4 minutes).
  3. Stir in the Cajun seasoning and smoked paprika, letting them toast for a minute to deepen their flavor.
  4. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender (about 15-20 minutes).
  5. Use a potato masher to mash some of the potatoes right in the pot for a creamy texture. Alternatively, use an immersion blender for a smoother consistency.
  6. Stir in the heavy cream and shredded cheddar cheese. Cook for another 5 minutes, stirring frequently, until the cheese melts and the soup thickens slightly.
  7. Taste and adjust the seasoning with salt and black pepper. Garnish with chopped green onions before serving.

Notes

For a dairy-free version, swap heavy cream with coconut milk and use dairy-free cheese. Adjust the heat level by adding more Cajun seasoning or cayenne pepper.
