A creamy, tangy, and spicy buffalo chicken dip perfect for game nights and casual gatherings, served with crispy tortilla chips for the perfect crunch.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (about 280g)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup hot sauce (120ml) – Frank’s RedHot recommended
  • 1/4 cup ranch dressing (60ml)
  • 1 cup shredded sharp cheddar cheese (115g)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the cooked chicken into bite-sized pieces, about 2 cups (280g).
  3. In a mixing bowl, combine the softened cream cheese (8 oz / 225g) with 1/4 cup (60ml) ranch dressing. Blend until smooth and creamy using an electric mixer or sturdy spoon.
  4. Add the hot sauce (1/2 cup / 120ml), garlic powder (1/2 tsp), onion powder (1/2 tsp), and a pinch of salt and pepper. Mix well.
  5. Fold in the shredded chicken and 1 cup (115g) shredded cheddar cheese. Combine gently to avoid clumping.
  6. Transfer the mixture into a greased 8×8-inch (20×20 cm) baking dish and smooth the top with a spatula.
  7. Bake for 20-25 minutes until hot and bubbly with a lightly golden top. Optionally, broil for 1-2 minutes for extra golden crust, watching carefully.
  8. Remove from oven and let cool for 5 minutes to thicken.
  9. Serve warm with crispy tortilla chips. Optionally, garnish with chopped green onions or cilantro.

Notes

Soften cream cheese fully before mixing to avoid lumps. Use ranch dressing for creaminess and balance of spice. Shred chicken finely for easy scooping. Watch baking time closely to avoid drying out. For extra flavor, add blue cheese crumbles or substitute half cheddar with Monterey Jack. Homemade tortilla chips can be baked at 375°F for 10 minutes for extra crispiness. Leftovers store well in the fridge for up to 3 days and can be reheated with a splash of milk or ranch dressing to maintain creaminess.
