  • 1 cup (240 ml) whole milk
  • 1/3 cup (65 g) granulated sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons orange zest (freshly grated)
  • 2 1/4 teaspoons (1 packet) unflavored gelatin
  • 3 tablespoons (45 ml) cold water
  • 1 1/2 cups (150 g) fresh or frozen cranberries
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (60 ml) orange juice (preferably fresh)
  • 1 teaspoon orange zest
  • 1/4 cup (60 ml) water

Instructions

  1. Bloom the gelatin: Sprinkle 2 1/4 teaspoons (or 1 packet) of unflavored gelatin over 3 tablespoons (45 ml) of cold water in a small mixing bowl. Let it sit for about 5 minutes until the gelatin blooms and absorbs the water.
  2. Heat the dairy mixture: Combine 1 cup (240 ml) heavy cream, 1 cup (240 ml) whole milk, 1/3 cup (65 g) granulated sugar, and 2 teaspoons of freshly grated orange zest in a small saucepan. Stir over medium heat until the sugar is completely dissolved. Do not let the mixture boil.
  3. Incorporate vanilla and gelatin: Remove the saucepan from heat and stir in 2 teaspoons of vanilla extract. Add the bloomed gelatin, whisking constantly until it’s completely dissolved. Strain the mixture through a fine mesh sieve for a smooth texture.
  4. Pour and chill: Divide the panna cotta mixture evenly among ramekins or dessert glasses. Cover each dish with plastic wrap and refrigerate for at least 4 hours, or until set.
  5. Prepare the cranberry topping: Combine 1 1/2 cups (150 g) fresh or frozen cranberries, 1/2 cup (100 g) granulated sugar, 1/4 cup (60 ml) orange juice, 1 teaspoon orange zest, and 1/4 cup (60 ml) water in another small saucepan. Cook over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens (about 10-15 minutes). Allow to cool completely.
  6. Serve and enjoy: Spoon the cooled cranberry topping over the set panna cotta. Garnish with more orange zest or fresh cranberries for an extra festive touch.
