  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, peeled and cubed
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plant-based milk (like almond or soy)
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, carrots, celery, and mushrooms. Cook for another 5 minutes, stirring occasionally.
  3. Add the cubed potatoes to the pot along with the tomato paste, smoked paprika, thyme, salt, and pepper. Mix well to coat the vegetables.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
  5. While the stew is simmering, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, and salt. Add the plant-based milk and olive oil, stirring until a thick dough forms.
  6. Using a spoon, drop small dollops of dumpling dough onto the simmering stew. Cover the pot and let the dumplings cook for 15 minutes. Avoid lifting the lid during this time!
  7. Once the dumplings are fluffy and cooked through, stir in the frozen peas. Let the stew simmer for an additional 5 minutes before serving.

Notes

For fluffier dumplings, ensure your baking powder is fresh. Avoid overmixing the dumpling dough for soft results. Add a splash of vegetable broth if the stew thickens too much.
