peach cobbler recipe - featured image

A comforting and easy-to-make peach cobbler featuring a fluffy yet crisp buttery crust, warm juicy peaches with a hint of cinnamon and lemon zest, served with creamy vanilla ice cream.

Ingredients

Scale
  • 5 cups fresh peaches, peeled and sliced (about 6 medium peaches)
  • 3/4 cup granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract (for peach filling)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract (for batter)
  • Creamy vanilla ice cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel peaches using a vegetable peeler or blanch in boiling water for 30 seconds then plunge into ice water. Slice into 1/2-inch thick pieces.
  3. In a large bowl, toss peaches with sugar, lemon juice, cinnamon, cornstarch, and vanilla extract. Stir gently and set aside for 10 minutes to macerate.
  4. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  5. Add milk, melted butter, and vanilla extract to the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the peach mixture into a greased 9×13 inch baking dish, spreading evenly.
  7. Dollop spoonfuls of the batter over the peaches, leaving some peaches visible.
  8. Bake for 40-45 minutes until the crust is golden brown and peach juices bubble through. Tent with foil if crust browns too quickly.
  9. Let the cobbler cool for about 10 minutes before serving.
  10. Serve warm with a generous scoop of creamy vanilla ice cream on top.

Notes

Use ripe but firm peaches to avoid watery filling. Frozen peaches can be used if thawed and drained. Do not overmix batter to keep crust tender. Let cobbler rest before serving for better texture. For gluten-free, substitute flour with almond or oat flour. For vegan, use plant-based milk and vegan butter alternatives.
