  • 2 large russet potatoes (baked and cooled)
  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream (full-fat preferred)
  • 1/4 cup mayonnaise
  • 1 1/2 cups sharp cheddar cheese (shredded)
  • 6 slices bacon (cooked crisp and crumbled)
  • 3 stalks green onions (thinly sliced)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Wash and pierce russet potatoes with a fork. Place directly on oven rack and bake 45-50 minutes until tender. Let cool completely.
  2. Cook bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and crumble once cooled.
  3. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Blend with electric mixer or whisk until smooth, about 2-3 minutes.
  4. Scoop cooled potato flesh into the bowl with cream cheese mixture. Mash with fork or potato masher until mostly smooth but slightly chunky.
  5. Stir in shredded cheddar cheese, crumbled bacon (reserve some for garnish), green onions (reserve some for garnish), garlic powder, onion powder, salt, and pepper. Fold gently to combine.
  6. Taste and adjust seasoning if needed. Transfer dip to serving dish and sprinkle reserved bacon and green onions on top.
  7. Refrigerate dip for at least 30 minutes before serving. Serve cold or at room temperature with chips, crackers, or fresh veggies.

Bake potatoes the day before or early to save time. Use softened cream cheese to avoid lumps. Reserve some bacon and green onions for garnish. Chill dip before serving for best flavor. Adjust thickness with milk or extra cheese if needed. Substitute Greek yogurt for sour cream for a tangier version. Use turkey bacon for a lighter option. Add smoked paprika for smoky heat.
