A quick and easy side dish featuring tender carrots glazed with a sweet honey butter sauce, perfect for busy weeknights or holiday feasts.

  • 1 pound (450 grams) carrots, peeled and cut into 1/4-inch thick slices or baby carrots
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons honey (raw or wildflower honey preferred)
  • 1 teaspoon brown sugar (optional)
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1/2 teaspoon sea salt, or to taste
  • Pinch of freshly ground black pepper
  • 1/4 cup (60 ml) water or vegetable broth

Instructions

  1. Peel and slice 1 pound (450 g) of carrots into 1/4-inch thick rounds or use baby carrots for a shortcut.
  2. Place a large skillet over medium heat and add 3 tablespoons of unsalted butter. Let it melt completely, about 2 minutes, until it starts to foam and smells nutty.
  3. Toss the sliced carrots into the skillet. Stir to coat them evenly with butter. Cook for about 5 minutes, stirring occasionally, until they start to soften and develop a slight golden color.
  4. Drizzle 2 tablespoons of honey over the carrots, then sprinkle 1 teaspoon of brown sugar (if using). Stir gently to combine. The mixture will bubble and caramelize—watch closely so it doesn’t burn.
  5. Pour in 1/4 cup (60 ml) of water or vegetable broth to help steam and soften the carrots further. Add 1 teaspoon of chopped fresh thyme (optional), 1/2 teaspoon sea salt, and a pinch of freshly ground black pepper. Stir well.
  6. Reduce heat to low, cover the skillet, and let the carrots simmer for 7-10 minutes. Check occasionally; the carrots should be fork-tender but not mushy.
  7. Remove the lid and increase heat to medium. Cook for another 2-3 minutes, stirring frequently to reduce any remaining liquid until the carrots are glossy and sticky with that honey butter glaze.
  8. Give the carrots a final taste and adjust salt or pepper if needed. Transfer to a serving dish and garnish with extra fresh thyme if desired. Serve warm and enjoy!

Notes

If glaze starts to burn, lower heat immediately and add a splash more water to loosen it. Use moderate heat to prevent burning. For vegan version, substitute butter with coconut oil and honey with maple syrup. Avoid microwaving leftovers to prevent sogginess.
