  • ⅓ cup (67g) granulated sugar
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 teaspoon salt
  • 1 cup (240ml) whole milk, warmed
  • ⅓ cup (75g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • ½ cup (100g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup (60g) unsalted butter, softened
  • 4 ounces (115g) cream cheese, softened
  • ¼ cup (60g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk or cream

Instructions

  1. Activate the yeast by combining warm milk (about 110°F/43°C) with sugar and yeast in a small bowl. Let sit for 5-7 minutes until foamy.
  2. In a large mixing bowl or stand mixer, whisk together flour and salt. Add melted butter, eggs, and yeast mixture. Mix until a rough dough forms.
  3. Knead dough for 8-10 minutes until smooth and elastic, by hand or with dough hook attachment.
  4. Shape dough into a ball, place in greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. While dough rises, mix softened butter, brown sugar, and cinnamon until creamy for the filling.
  6. Punch down risen dough and roll out on floured surface into a 15×10 inch rectangle about ¼ inch thick.
  7. Spread cinnamon filling evenly over dough, leaving a small border around edges.
  8. Roll dough tightly from one long edge into a log. Slice into 12 even pieces with a sharp knife or pizza cutter.
  9. Shape each slice into a heart by pressing flat and pinching one side to create an indentation.
  10. Arrange heart-shaped rolls in greased 9×13 inch baking pan, leaving space between. Cover and let rise for 30-45 minutes until puffy.
  11. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown and cooked through.
  12. While rolls bake, beat together cream cheese, butter, powdered sugar, vanilla, and milk until smooth and creamy, adjusting milk for desired consistency.
  13. Once rolls are slightly cooled (about 10 minutes), spread or drizzle creamy icing generously over the top. Serve warm.

Notes

Keep milk temperature around 110°F to activate yeast without killing it. Knead dough well for soft texture. Avoid overfilling with cinnamon sugar to prevent sogginess. Allow full second rise for fluffy rolls. Adjust icing thickness by adding milk a tablespoon at a time. Rolls can be made ahead and refrigerated overnight after first rise.
