Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Mix in the eggs, vanilla extract, and dissolved coffee granules. Beat until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Avoid overmixing.
  6. Cover the bowl with plastic wrap and refrigerate for 20 minutes to make the dough easier to handle.
  7. Scoop out tablespoon-sized portions of dough, roll them into balls, and coat generously in powdered sugar.
  8. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes or until the tops are crackled and the edges are set.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
