A warm and comforting oatmeal recipe featuring creamy oats, fragrant cinnamon, and crunchy toasted pecans, perfect for cozy holiday mornings.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 2 cups (480ml) milk (whole milk or almond/oat milk for dairy-free)
  • 1/2 cup (120ml) water
  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons brown sugar (or maple syrup/honey)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) chopped pecans
  • 1 tablespoon butter (or plant-based butter/coconut oil for vegan)
  • Optional toppings: fresh berries, sliced bananas, yogurt, maple syrup

Instructions

  1. Toast the pecans: Place 1 tablespoon of butter in a dry skillet over medium heat. Once melted, add the chopped pecans. Stir frequently for 3-5 minutes until golden and fragrant. Remove from heat and set aside.
  2. Combine oats and liquids: In a medium saucepan, add rolled oats, milk, and water. Stir gently to combine.
  3. Add spices and sugar: Mix in ground cinnamon, brown sugar, and salt.
  4. Cook the oatmeal: Place saucepan over medium heat and bring to a gentle boil, stirring occasionally. Reduce heat to low and simmer uncovered for 10-12 minutes, stirring every couple of minutes until oats are creamy and tender.
  5. Finish with vanilla: Remove from heat and stir in vanilla extract.
  6. Serve: Spoon oatmeal into bowls, sprinkle with toasted pecans, and add optional toppings as desired.

Notes

Toast pecans carefully to avoid burning. Use certified gluten-free oats for gluten-free diet. For vegan, substitute milk and butter with plant-based alternatives. Adjust thickness by adding milk or cooking longer. Optional toppings add flavor and texture.
