  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 2 large eggs, room temperature
  • ½ cup (120 ml) vegetable oil (can substitute with melted coconut oil)
  • 1 teaspoon vanilla extract
  • 2 cups (220 g) finely shredded carrots (about 4 medium carrots)
  • 1 cup (100 g) chopped walnuts (toasted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant and slightly browned. Set aside to cool.
  3. In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and pale, about 2-3 minutes.
  5. Slowly add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Do not overmix.
  6. Fold in the shredded carrots and toasted walnuts gently to distribute evenly.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs. Tent with foil if the top browns too fast.
  9. Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

For best texture, shred carrots finely and toast walnuts to enhance flavor. Avoid overmixing the batter to keep the bread tender. Let the bread cool completely before slicing to prevent crumbling. If shredded carrots are wet, squeeze out excess moisture to avoid soggy bread. Tent with foil if the top browns too quickly during baking.
