  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 1 small head cabbage (about 2 lbs), chopped
  • 6 cups chicken or beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, milk, egg, minced garlic, parsley, salt, and pepper until combined. Shape into bite-sized meatballs.
  2. Heat 1 tbsp olive oil in a stockpot over medium heat. Brown meatballs in batches for about 5 minutes. Remove and set aside.
  3. Add remaining olive oil to the pot and sauté onions, carrots, and celery until softened, about 5 minutes. Stir in garlic and cook for another minute.
  4. Add chopped cabbage and stir to coat with the vegetable mixture. Pour in broth, tomato paste, and bay leaves. Season with salt and pepper.
  5. Return browned meatballs to the pot. Bring soup to a boil, reduce heat to a simmer, and cover. Cook for 30 minutes, stirring occasionally.
  6. Ensure cabbage is tender and meatballs are cooked through. Taste broth and adjust seasoning if needed.
  7. Ladle soup into bowls and garnish with fresh parsley.
