  • 6 large eggs, room temperature
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas, warmed
  • 1/4 cup milk or half-and-half (optional)
  • 1/4 cup finely diced onion
  • 1/4 cup diced red or green bell pepper (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)
  • Hot sauce or salsa for serving

Instructions

  1. Dice the onion, bell pepper, and chop the cilantro. Crack the eggs into a mixing bowl, add the milk or cream, and beat lightly with a fork until combined. Set aside.
  2. Heat your skillet over medium heat. Add the sausage, breaking it apart with your spatula. Cook for about 6-8 minutes until browned and cooked through, stirring occasionally. Remove the sausage from the pan and set aside, leaving the rendered fat in the skillet.
  3. In the same skillet, add the diced onion and bell pepper. Cook over medium heat for 3-4 minutes until softened and fragrant. Add a pinch of salt and garlic powder here to enhance flavor.
  4. Reduce heat to medium-low. Pour the beaten eggs into the skillet with the vegetables. Let them sit undisturbed for about 30 seconds, then gently push the eggs from the edges to the center using your spatula. Continue folding until eggs are just set but still moist, about 3-4 minutes. Be careful not to overcook.
  5. Return the cooked sausage to the skillet with the eggs and vegetables. Sprinkle smoked paprika, salt, and pepper. Stir gently to mix everything well and warm through for an additional minute.
  6. While the filling finishes, warm your tortillas in a dry skillet over medium heat for about 20 seconds per side or microwave wrapped in a damp towel for 20 seconds.
  7. Lay a warm tortilla flat. Spoon about 1/4 of the sausage and egg mixture onto the center. Sprinkle with shredded cheese and chopped cilantro. Add hot sauce or salsa if desired.
  8. Fold the sides over the filling, then roll tightly from one end to the other. Repeat with remaining tortillas and filling.
  9. Optional: Toast the wrapped burritos in the skillet for 1-2 minutes per side until golden brown for a crispy finish.

Use room temperature eggs for fluffier scrambling. Cook sausage thoroughly and avoid overcrowding the pan for better browning. Scramble eggs slowly over low heat to keep them soft and creamy.
