Cozy Beef Noodle Soup Recipe Perfect for Cold Nights

A hearty and comforting beef noodle soup with tender beef, savory broth, and egg noodles—perfect for chilly evenings and family gatherings.

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 6 cups beef broth
  • 8 oz egg noodles
  • 2 carrots, peeled and sliced into thin rounds
  • 2 celery stalks, chopped into small pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté the onion, carrots, and celery until softened, about 5 minutes. Add the garlic and cook for an additional minute.
  3. Stir in 2 tablespoons of tomato paste until well combined, then add the beef back to the pot.
  4. Pour in 6 cups of beef broth and add 2 bay leaves and 1 teaspoon of dried thyme. Bring to a boil, then reduce the heat to a simmer.
  5. Cover and cook for 25-30 minutes, stirring occasionally, until the beef is tender and the flavors have melded together.
  6. Add the egg noodles and cook according to package instructions, usually 8-10 minutes, until tender.
  7. Season the soup with salt and black pepper to taste. Remove the bay leaves before serving.
  8. Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot and enjoy!

Notes

For extra flavor, deglaze the pot with red wine before adding the broth. Add noodles just before serving if making ahead to prevent sogginess.
