  • ½ cup (100g) packed brown sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • ½ cup (120ml) milk, room temperature
  • 1 tsp vanilla extract
  • 1 cup (150g) peeled and diced apples (Honeycrisp or Granny Smith recommended)
  • ½ cup (65g) all-purpose flour (for streusel topping)
  • ¼ cup (50g) granulated sugar (for streusel topping)
  • ¼ cup (50g) packed brown sugar (for streusel topping)
  • ½ tsp ground cinnamon (for streusel topping)
  • 4 tbsp (60g) unsalted butter, melted (for streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a medium bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, milk, and vanilla extract. Whisk until smooth and well-combined.
  4. Gradually add the wet mixture to the dry ingredients. Use a spatula to gently fold until just combined—be careful not to overmix.
  5. Fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  6. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  7. In a small bowl, prepare the streusel topping by combining the flour, granulated sugar, brown sugar, and cinnamon. Pour in the melted butter and mix until crumbles form.
  8. Sprinkle the streusel topping generously over each muffin, pressing lightly to help it adhere.
  9. Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
