  • 2 large chicken breasts, sliced into thin strips
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/2 cup unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 1/4 cup chopped fresh parsley
  • 12 oz linguine
  • Salt, for pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente (8-10 minutes). Drain, reserving about 1/2 cup of pasta water.
  2. In a bowl, toss the sliced chicken with paprika, garlic powder, salt, and pepper until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-6 minutes, turning occasionally, until golden brown and fully cooked. Remove the chicken and set aside.
  4. In the same skillet, lower the heat to medium and add melted butter. Stir in minced garlic and cook for about 30 seconds until fragrant. Whisk in Dijon mustard, lemon juice, red pepper flakes, smoked paprika, and parsley. Season with salt and pepper to taste.
  5. Return the cooked chicken to the skillet, tossing it in the butter sauce until well-coated.
  6. Add the cooked linguine to the skillet with the chicken and cowboy butter sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it up.
  7. Stir everything together and cook for 1-2 minutes to allow the flavors to meld. Serve immediately, garnished with extra parsley if desired.
