A hearty and flavorful chicken cobbler with a creamy filling and buttery biscuit topping, perfect for chilly evenings or family dinners.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups mixed vegetables (frozen peas and carrots)
  • 1 small onion, finely diced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until soft (about 3 minutes).
  3. Sprinkle in the flour and whisk continuously for 1-2 minutes to create a roux.
  4. Slowly pour in the chicken broth while whisking, followed by the heavy cream. Simmer until the sauce thickens, about 3-5 minutes.
  5. Add the shredded chicken, mixed vegetables, garlic powder, salt, and pepper. Stir well to combine, then transfer the filling to the prepared baking dish.
  6. In a mixing bowl, whisk together the flour, baking powder, salt, and garlic powder. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  7. Pour in the milk and gently stir until the dough comes together. Avoid overmixing.
  8. Drop spoonfuls of the biscuit dough over the chicken filling, leaving some gaps for steam to escape.
  9. Bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
  10. Let cool for 5 minutes before serving.

Notes

[‘Don’t skip the roux—it’s the secret to a creamy, lump-free sauce.’, ‘Use cold butter for the biscuits to create a flaky texture.’, ‘Rotisserie chicken saves time and adds flavor.’, ‘Taste the filling and adjust seasoning before assembling.’, ‘Cover the dish loosely with foil if biscuits brown too quickly.’]
