Rich, buttery blondies with a crackly cinnamon sugar topping—perfect for fall gatherings or cozy treats.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and glossy.
  4. In a separate bowl, stir together the flour, cinnamon, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Do not overmix.
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping.
  7. Pour the batter into the prepared baking pan and smooth the top with a spatula. Sprinkle the cinnamon sugar mixture evenly over the batter.
  8. Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Let the blondies cool completely in the pan before lifting them out using the parchment paper overhang. Slice into squares and enjoy!

Notes

[‘Do not overmix the batter to avoid dense blondies.’, ‘Use room temperature eggs for better blending.’, ‘Start checking for doneness at the 30-minute mark to avoid overbaking.’, ‘Cool completely before slicing to prevent crumbling.’]
