Cheesy Texas Trash Dip

A creamy, cheesy, and slightly spicy Tex-Mex dip that’s perfect for parties and gatherings. Easy to make and always a crowd-pleaser.

  • Two 16-ounce cans refried beans
  • One 8-ounce block cream cheese, softened
  • One cup sour cream
  • Two cups shredded cheddar cheese
  • One cup shredded Monterey Jack cheese
  • One 10-ounce can Rotel tomatoes, drained
  • Two tablespoons taco seasoning
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch baking dish lightly with cooking spray or butter.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, refried beans, and taco seasoning. Mix until smooth and fully incorporated.
  3. Fold in the Rotel tomatoes and one cup of shredded cheddar cheese. Make sure everything is evenly distributed.
  4. Transfer the mixture into the prepared baking dish, spreading it out evenly with a spatula.
  5. Top the mixture with the remaining cheddar cheese and the Monterey Jack cheese, creating an even layer.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  7. Remove the dish from the oven and let it cool for about 5 minutes before serving. Garnish with chopped green onions, if desired.
  8. Serve warm with tortilla chips, pita chips, or sliced veggies.
