  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup pumpkin puree
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. In a small saucepan, melt the butter over medium heat. Stir constantly until it turns golden brown and smells nutty, about 5-7 minutes. Transfer to a heatproof bowl and let cool slightly.
  2. In a large mixing bowl, whisk together the cooled brown butter, brown sugar, granulated sugar, pumpkin puree, egg yolk, and vanilla extract until smooth.
  3. In a separate bowl, sift together the flour, baking soda, cream of tartar, cinnamon, pumpkin spice, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix until a soft dough forms. Cover and chill the dough in the refrigerator for 30 minutes.
  5. In a small bowl, mix together the granulated sugar and cinnamon for the coating.
  6. Scoop out 1.5 tablespoons of dough and roll into balls. Coat each ball thoroughly in the cinnamon-sugar mixture.
  7. Preheat your oven to 350°F (175°C). Arrange the dough balls on parchment-lined baking sheets, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are set but the centers look slightly soft.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
