  • 46 red chili peppers (Fresno, Thai, or habanero)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 tablespoon sea salt
  • 1 cup filtered water

Instructions

  1. Wash the cranberries and chili peppers thoroughly. Remove stems from the peppers and roughly chop them. Peel and mince the garlic and ginger.
  2. In a large mixing bowl, add the cranberries, peppers, garlic, ginger, honey, apple cider vinegar, and sea salt. Stir well to combine evenly.
  3. Add filtered water to the mixture, just enough to cover the ingredients completely. Stir to dissolve the salt and distribute flavors.
  4. Spoon the mixture into sterilized mason jars, leaving about an inch of space at the top. Use fermentation weights to keep the relish submerged in the brine.
  5. Cover the jars loosely with lids to allow gases to escape or use a fermentation lid. Place the jars in a cool, dark place for 7-10 days.
  6. Open the jars briefly each day to release built-up gases and ensure the relish stays submerged. Look for bubbles—these indicate fermentation is happening.
  7. After 7 days, taste the relish. If you want a stronger tang, let it ferment for a few more days. When satisfied, transfer jars to the refrigerator to halt fermentation.
