These homemade spicy pickled jalapeno peppers are crisp, bright, and packed with real jalapeno flavor—spicy, tangy, slightly sweet, and deeply savory. Quick and easy to make, they keep their crunch for weeks and elevate tacos, nachos, sandwiches, eggs, and more.

  • 1 pound fresh jalapeno peppers
  • 1 cup distilled white vinegar
  • 1 cup water
  • 1 tablespoon kosher salt (Diamond Crystal preferred; reduce to 2 teaspoons if using table salt)
  • 1 tablespoon granulated sugar
  • 45 garlic cloves, smashed
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 bay leaf
  • Optional: pinch of cumin seeds, slice of onion, dried chile de arbol, carrot sticks, or cauliflower florets

Instructions

  1. Prepare the jalapenos: Wash and dry the peppers. Slice off stems. For rings, slice crosswise into 1/4-inch rounds. For strips, halve lengthwise and remove ribs/seeds if desired (leave seeds for more heat). Wear gloves if sensitive.
  2. Pack the jars: Divide sliced jalapenos evenly between 2 pint-sized or 1 quart-sized mason jars. Add smashed garlic cloves, bay leaf, peppercorns, and oregano. Leave about 1/2 inch headspace.
  3. Make the brine: In a medium saucepan, combine vinegar, water, salt, and sugar. Stir to dissolve. Bring to a boil over medium-high heat and let boil for 1 minute.
  4. Pour the brine: Carefully pour hot brine over jalapenos, ensuring they are fully submerged. Tap jars gently to release air bubbles; use a chopstick to dislodge any clinging bubbles.
  5. Cool and seal: Let jars cool to room temperature (1-2 hours). You may hear lids pop. Once cool, screw lids on tightly and refrigerate.
  6. Wait: Let sit in the fridge for at least 24 hours (48 hours is better) before eating to allow flavors to develop.

Notes

For extra-crispy peppers, add 1 teaspoon calcium chloride (Pickle Crisp) per jar before pouring brine. Do not skip the cooling step before refrigerating to avoid cracking jars. The brine can be reused to pickle other vegetables or in dressings and marinades.
